I was staring at a jar of green lentils in my cupboard for way too long and I have this thing where I love finishing jars of everything, and then starting all over from scratch. The lentils needed to be used. The challenge was, it was 8pm and I did not want to head out to the market to buy any ingredients. This is where the Lentil Stew Soup originated.
Have you ever had freshly roasted chestnuts that are scooped into a paper bag, and then placed in your coat pocket to keep you warm? I have and they were delicious! The smell and experience of eating the chestnuts while they were warm and sold by a vendor in the cold on streets brought me that warm fuzzy nostalgic childlike feeling that you can get during the holidays. I thought this would be a fun recipe to share with everyone for the holiday season!
